Pectic Enzyme
Pectic enzyme, also known as Pectinase, breaks down pectin, the glue that holds plant cells together. In wines pectin often causes “pectin haze” which is not easily cleared without the use of pectic enzymes.
Adding pectinase (or pectic enzyme) to cider breaks down pectin to prevent a permanent, gelatinous haze. Suggested dosage for cider making is 3.0ml per 4.0 lites of ferment.
